Ingredients:

Approx. 5 lbs. turkey (cubed or sliced)
6 TBS butter
1/2 cup flour
1 tsp salt
1/4 tsp pepper
1/4 tsp nutmeg
1 can chicken broth
1 cup heavy cream
2/3 cup milk
2/3 cup grated parmesan
1/3 cup dry sherry
Diced green onion
Diced green pepper
Diced pimento
Spinach Noodles (cooked)
Fresh mushrooms (optional)

Directions:

  • Melt butter and add onion, green pepper, Pimento (and mushrooms if using) and sauté slightly. Remove from pan.
  • In remaining butter, stir in flour, salt, pepper, nutmeg. Stir constantly for 1 minute. Gradually add broth, cream, milk and stir until sauce thickens and bubbles.
  • Once sauce has thickened and is bubbling, stir in 1/3 cup of parmesan and the sherry. Stir in onions, green pepper and pimento (and mushrooms if using).
  • Arrange turkey on top of cooked noodles, cover with sauce and sprinkle remaining parmesan over the top.
  • Bake at 350° for 30 minutes.
